Keto Friendly - Gluten Free
Ingredients:
1 1/2 cup coconut cream
1 cup cashews (soaked for 3 hours)
2 tsp vanilla essence
Orange layer
2 scoops Nothing Naughty Vanilla Lean Bean Protein Powder
Rind and juice of 1 orange
1 tbsp Nothing Naughty Natural Fibre Syrup
Chocolate layer
1/3 cup Nothing Naughty Keto Koko
1 scoop Nothing Naughty Vanilla Lean Bean Protein Powder
2 Tbsp cocoa powder
Chocolate coating
4 Tbsp coconut oil
3/4 cup dark chocolate
Directions:
1. Blend the cashews, coconut cream, and vanilla essence until a smooth, creamy texture forms. Tip out half of the mixture into a bowl.
2. Add Protein Powder, the rind and juice of 1 orange, and Fibre Syrup to the blender with the cream. Blend until smooth.
3. Tip the orange cream into a bowl, then add the other half of the cream mixture to the blender along with the Keto Koko, Protein Powder, and cocoa powder.
4. Blend until it forms a creamy consistency and is well incorporated.
5. Line a loaf tin with baking paper and pour in the orange cream first, then the chocolate cream on top. Use a skewer to swirl the mixture and create a marbled effect.
6. Freeze for at least 5 hours, or until solid. Once frozen, cut into squares of your preferred size.
10. Melt the coconut oil and dark chocolate in a double boiler. Pour the melted chocolate into a small bowl. Dip the squares into the chocolate, then place them on a plate. Repeat for all the squares.
11. Place the squares back in the freezer for at least 1 hour, then enjoy!
