Ingredients
2 Tbsp olive oil
1 onion (diced)
1 Tbsp garam masala
1 tsp curry powder
1 tsp ginger powder
1/4 tsp chilli powder (optional)
1 can tomato paste (170g-200g)
400mL coconut milk
Veggies of choice
Block of paneer cheese
Salt and pepper to taste
Directions:
1. Cook onions in olive oil for 5-10 minutes until they become translucent.
2. Add spices (garam masala, curry, ginger, and chilli powder). Cook on low heat for two minutes, making sure to keep stirring.
3. Add tomato paste and mix well. Then add the coconut cream and mix well.
4. Add chopped veggies of choice and paneer; mix well.
5. Simmer on low-medium heat for about 15-20 minutes, stirring occasionally. Once the veggies are cooked, serve over rice with a garnish of coriander (optional).
